Carrot and Fruit Cake

Ingredients

Set A
  • 3 eggs
  • 3/4 cup oil
  • 1/4 cup plain yoghurt
  • 3/4 cup milk
  • 2 tsp vanilla essence

Set B

  • 2 cups flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon

Set C

  • 2 cups shredded carrots
  • 1 cup flaked or dessicated coconut
  • 1 cup chopped almonds/walnuts/pecans
  • 1 cup crushed pineapple
  • 1 cup raisins

Method

  1. Preheat oven to 175 C / 350 F
  2. Beat together Set A ingredients until smooth.
  3. Mix together Set B ingredients and then beat into Set A gradually.
  4. Mix together Set C ingredients and then fold into above mix.
  5. Pour into a 8 x 12 inch pan lined with a baking sheet and bake for 1 hr.

Note: This is a large cake which can easily serve 8 to 10 people.
