Set A
- 3 eggs
- 3/4 cup oil
- 1/4 cup plain yoghurt
- 3/4 cup milk
- 2 tsp vanilla essence
Set B
- 2 cups flour
- 2 tsp baking soda
- 1/4 tsp salt
- 2 tsp cinnamon
Set C
- 2 cups shredded carrots
- 1 cup flaked or dessicated coconut
- 1 cup chopped almonds/walnuts/pecans
- 1 cup crushed pineapple
- 1 cup raisins
Method
- Preheat oven to 175 C / 350 F
- Beat together Set A ingredients until smooth.
- Mix together Set B ingredients and then beat into Set A gradually.
- Mix together Set C ingredients and then fold into above mix.
- Pour into a 8 x 12 inch pan lined with a baking sheet and bake for 1 hr.
Note: This is a large cake which can easily serve 8 to 10 people.
